天气变暖,是时候野餐烧烤了。尽管由于各种原因,一部分人不常吃牛肉,但偶尔吃一顿牛排的诱惑仍是很难以令人抗拒的——你将会很期待这种体验。

那么,炙烤牛排的最佳方法是什么呢?有一些遵循科学的答案。

肉类科学家利用整个职业生涯来研究怎样尽可能地去生产出最鲜嫩、最美味的牛肉,虽然他们研究的课题大多数只对牛的生产商和加工商有参考意义,但是他们的一些发现也可以对烧烤师傅在选择什么样的肉烧烤过程需要注意哪些细节上提供一些指导。

让我们首先从肉的选择开始。每一位经验丰富的厨师都知道,牛脊骨附近的腰部肌肉组织锻炼较少,具有更少的肌肉结缔组织,因此与经常锻炼的腿部肌肉相比更加鲜嫩。并且他们知道要寻找上面布满大理石纹理的牛排,这些纹理是填充在肌肉纤维之间的脂肪沉积,是高品质肉的标志。美国犹他州立大学的肉类科学家玛特纳(Sulaiman Matarneh)发表的关于肌肉生物学和肉类品质的文章说到:“如果拥有更多的大理石纹理,肉就会更鲜嫩多汁,味道也会更加浓郁。”

事实上,不同牛排之间风味的差异主要取决于脂肪含量,既指大理石纹理的含量也包括脂肪分子中的脂肪酸亚基的成分。像肋眼牛排这样的优质部位拥有更多的大理石纹理,并且油酸含量也更加丰富,油酸是一种非常美味的脂肪酸。“这种脂肪酸会给人们带来超棒的味觉体验。” 美国德克萨斯理工大学的肉类科学家列嘉科(Jerrad Legako)说。相比之下,西冷含有较少的油酸和更多其他种类的脂肪酸,使得其在烹饪过程中会产生不那么吸引人的腥味。

这种脂肪酸的差异也体现在消费者在购买牛排时的选择上:是谷饲牛肉还是草饲牛肉?谷物饲养的牛主要以玉米和大豆为食,直到生命最后都生活在饲养场中,肉质中含有更丰富的油酸;一生都在牧场上吃草的动物体内的omega-3脂肪酸比例较高,这种多不饱和脂肪酸可以分解成具有鱼腥味的小分子。无论如何,更多消费者喜欢购买草料饲养的牛肉,要么是为了避免饲养场的道德问题,要么是因为他们更喜欢野味和瘦肉。

肉牛的饮食会影响肉的味道。谷饲的牛,比如图中所示加州饲养场的牛,产出的肉有大理石纹理,比草饲的牛脂肪更多,后者一生都在牧场上吃草。谷饲牛肉还含有较高比例的油酸,这是一种大多数人都觉得特别美味的脂肪酸。草饲牛肉含有更高比例的omega-3脂肪酸,这种脂肪酸在烹饪过程中分解成带有腥味和野味的化合物。图源Jim West

然而,对牛排的最终风味影响最大的还是采用什么样的烹饪方法,烹饪可以从两个方面提升肉的味道:高温炙烤可以将肉的脂肪酸分解成更小的分子,这些小分子更易挥发,也就是说更容易通过气体传播。这些挥发物是牛排香气的主要来源,大部分决定了牛排的味道。其中的醛类、酮类和醇类分子就是给我们带来丰富味蕾体验的物质。

烹饪的第二种提升味道的方法是通过褐变,化学家将这种过程叫做美拉德反应。这种反应极其复杂,首先肉类中的氨基酸和微量糖在高温下发生反应,继而引发一连串的化学变化,最后导致许多不同的挥发性终产物。其中最重要的是被称作为吡嗪和呋喃的分子,它们为牛排爱好者带来所期望的烘焙和坚果香味。烹饪的时间越长、温度越高,美拉德反应就越深入,得到的理想终产物就越多——直到最后,肉开始烧焦,产生难闻的苦味和烧糊的味道。

美国德州农工大学的肉类科学家克里斯·克尔斯(Chris Kerth)说:“薄牛排熟得更快,所以它们需要一个热的烤架以便在短时间内产生足够的褐变。” 克尔斯和他的同事在实验室研究了这一过程,他们精确地炙烤牛排,并将产物放到气相色谱仪中,来测量产生的每种挥发性化学物质的量。

正如所料,克尔斯发现在相对较低的温度下烹饪半英寸(约1.2厘米)厚的薄牛排具有最浓郁的脂肪酸分解后所特有的牛肉风味,而在较高的温度下也会有大量由美拉德反应所产生的烘烤吡嗪。所以,如果你的牛排很薄,不妨打开烤架,把盖子打开,让肉烤得慢一点。这就会给你足够的时间去产生丰富、浓郁的牛肉风味。

为了让肉的两面都拥有诱人的色泽,大约在总烹饪时间的三分之一时翻面,而不是等到过一半时间——这是因为克尔斯的团队发现当烹饪第一面时,收缩的肌肉纤维会将水分转移到未烹饪的一面。翻转后,这些水会冷却第二面,因此需要更长的时间才能呈现棕色。

牛排的味道主要来自于烹饪肉类时产生的小分子。下面是其中一些分子和它们赋予的风味。如果你无肉不欢,看看能否在你的下一块牛排中挑选出这些味道。

当科学家们测试更厚的1.5英寸(约3.8厘米)牛排时,出现了矛盾:在中间的牛排完成烹饪之前,外部的牛排会不幸地烤糊。对于这些牛排来说,适宜的烧烤温度可以最大限度地使各种挥发物充分混合。当试吃者品尝克尔斯团队的牛排时,他们对高温速烤的厚牛排评分较低。食客们对在中等温度下烹饪的牛排略有好感,但对其他的温度和烹饪时间制作的牛排评价都很相似。

这可能看起来很奇怪,因为牛排馆经常宣传他们的上等厚切牛肉和高温烤架——这正是克尔斯研究发现的最不可取的组合。它之所以可行是因为牛排馆采用两步烹饪过程:首先,他们在热烤架上烤肉,然后在适宜温度的烤箱中完成烹饪。克尔斯说:“这样,他们就可以获得他们想要的焦度以及相应的熟度。”家庭厨师也可以这样做,把烤好的肉放入175摄氏度的烤箱里,直到达到他们想要的熟度。

当然,最佳的完成度在很大程度上取决于个人喜好——但科学在这方面也有话说,克尔斯说:“半熟的肉没有得到足够的热量来分解脂肪酸,因此会有浓郁的生牛肉味道。一旦你超过了五分熟,就会减弱一些半熟肉的那种“血腥”味道。克尔斯说:“很多人,包括我自己,都喜欢吡嗪和美拉德化合物的 ‘血腥’味道,它的味道更浓郁。”出于这些原因,他建议:“我不会选择低于五分熟的,当然也不会选择高于五分熟的。否则你就会开始错过很多味道。”

克尔斯对家庭厨师还有一条建议:当肉放在烤架上时,要仔细观察!”当你处于合适的烹饪温度时,短时间内会发生很多事情,从一开始很快就会发生很多化学反应”这是每个有经验的烧烤师都从痛苦经历中学到的科学准则:如果你稍不注意,肉就容易烧焦。
