We are in the best market in Beijing. And it would be criminal not to cook up a traditional New Year feast. Luckily we are going to have a helping hand, local restaurateur Sue Zhou is from a long line of chefs. So she knows old school Chinese cookery inside out.
我们在北京最好的市场里面，不烹饪传统新年大餐真是罪过。幸运的是我们有一个帮手，本地的餐饮店主苏周，她出生于大厨世家，她对中国传统烹饪了如指掌。
Xiaobing: Do you often come here?
你经常来着吗？
Sue Zhou: Yes, it's really nice to be here. It’s a huge market and you can get anything here, it’s like anything you can think of, you can get it here.
这是一个大卖场，啥都有，你能想到啥都能在这里买到。
The first things Sue wants to show us is a Beijing cookery Basic, the cabbage.
Xiaobing: Why have you brought us here, Su?
苏要带我们看的第一种蔬菜是京菜的基本原料，大白菜。苏，为什么带我们来这儿？
Sue Zhou: So in Chinese we call this Baicai. The cabbage, Chinese Cabbage, and the reason why we love to eat it at New Year is if you pronounce it slightly different that means 100 fortune in Chinese.
我们中国人管这叫白菜，中国大白菜。新年里我们之所以爱吃这个，是因为在中文里它的发音跟“百财”只有一点小不同。
Xiaobing: It sounds more like a pie in the meal.
听起来就像我们吃的“派”。
Sue Zhou: It is.
Xiaobing: Two cabbages.
Sue Zhou: So we are going to cook a hot pot.
Xiaobing: It is like a really traditional dish here?
Sue Zhou: It is, yeah. Success, wo de xiao bing.
Sue’s given us a list of hot pot ingredients to find in the market. Lotus root, mushrooms and beef. There are no stalls. The trucks rock up, they sell their vegetables and they go home and that is how it works.
苏给了我们一张火锅料单到市场入货，莲藕、蘑菇还有牛肉。这都没有摊位，货车列阵，他们就这样卖菜，卖完回家，就是这样子做买卖。
He’s sold out.
Have you sold…， oh, good, very good.
Hello, how are you?
I am very good, how are you.
You know what? There is a really happy atmosphere here, isn’t there? It’s lush.
Sue wants us to get lotus root. Look at that, they look like living in a swamp of it’s own making. That’s remarkable. Go on, Dave, get stuck in. Right, I’ll have three.
Now Dave calls this a hard-nosed padding technique.

Onto the next item on Sue’s list, mushrooms.
Look at them, they are like velvet. They look like people’s ears. You know like, when you played rugby, the cauliflowers ears. Get loads. Thees are superb.
There is one more item left to buy and that means heading deep into the heart of the market. This is Beijing’s meat hangar. In the west we tend to design a meal around our choice of meat. But traditional Chinese cooks use meat more like a garnish.
There is such a lot of choice.
Now, I know my beef, but finding the right cut for the recipe is not as easy as you might think.
You’d have to recognize the joints. That’s silverside, the silverside would be good. Yeah, let’s do that. Can we have this? Please, thank you! Thank you! Happy New Year!
Well, it was a bit of mission, but we finally tracked down and bought everything on the list. And once we find Sue’s restaurant we can get cooking. Tuck away in the depth of old Beijing. Sue’s place is the perfect homely spot to enjoy a traditional New Year hot pot.
Xiaobing: What would you like us to do?
Sue Zhou: So we’re going to slice it up.
Xiaobing: just slice it up.
As we chop up all those lovely Chinese vegetables. Look at that, the design of the piece. We get a hearty broth an the boil and then in goes the beef.
Sue Zhou: Just like drop it in here.
It is like a Chinese fondue.
Xiaobing: Oh no.
Sue Zhou: It sticks there.The pot wants to have your piece of meat.
Xiaobing: It is utter genius, this. It’s theatre, isn’t it? It is.
Sue Zhou: I think it is done, yeah.
Xiaobing: It is time to let the New Year feasting began.
Sue Zhou: For you guys, flowing for.
Xiaobing: Beef.
Sue Zhou: Hot? It’s hot pot.
Xiaobing: It is true that the Chinese like a bit of chew, like bite in the food. Yes, we call it QQ which is like chewiness. We like if it bounce back that texture we really like.
Cooking and eating together at the table is just fantastic. No wonder this is a New Year favourite.
Xiaobing: This would be a great thing to do at home. Get yourself a little burner, a little pot and get family around. Don’t burn yourself. You’d wind up as Sue, though we’ll definitely dock on.
